Chef Yoshida curates a 19-course progression that highlights both tradition and creativity, from otsumami to nigiri, soup, and dessert. his approach to omotenashi – deeply thoughtful, anticipatory hospitality – defines the experience as much as the cuisine itself. seasonal inspiration drives the menu, with standout plates like wagyu hand roll with caviar, uni risotto, and butter-poached lobster. guests may enhance the evening with wine and sake pairings by level III sommelier Joon Lim, or choose from a list of cocktails, premium sake, and Japanese beers.
every detail of M @ Umi’s 250-square-foot space reflects refined craftsmanship and understated luxury. designed in collaboration with tom dixon’s design research studio and gareth payne studios, the room balances Japanese tradition with contemporary elegance. globe pendants, a white maple chef’s counter, and white yakisugi walls create a light-filled backdrop, while todd murphy’s striking painting anchors the space with artistic gravitas. guests are invited to revel in the counter experience – a front-row seat to a first-class omakase journey.

Omakase, meaning “i’ll leave it up to you,” is a dining tradition that places full trust in the chef’s hands. originating in Japan in the 20th century, omakase began as a way for sushi masters to guide diners through the freshest selections of the day, often chosen directly from the local fish market. what started as a humble exchange between chef and guest has evolved into one of the most revered expressions of Japanese dining, celebrated for its artistry, precision, and intimacy. each course reflects the chef’s intuition — balancing seasonality, technique, and creativity to craft a one-of-a-kind experience. in recent decades, omakase has found a global audience, becoming beloved for the way it transforms a meal into a performance of trust and discovery. today, it remains the pinnacle of sushi culture, where the diner is invited not just to eat, but to be guided, surprised, and delighted.
born in Nagasaki, Japan, Chef Kazuo Yoshida has been a pioneer of omakase-style restaurants in the u.s. since his arrival to new york city in 1992. now co-executive chef of Umi – a nationally acclaimed sushi and Japanese restaurant in atlanta – he oversees the restaurant’s sushi program, including the omakase room. Chef Yoshida brings his dynamic and innovative flair to the main dining room and spirited personality to a classic omakase experience with modern, creative twists.
with over three decades of omakase experience in new york city where he is affectionately known as the “uni king,” Chef Yoshida hopes to inspire more people to explore the art of true omakase, complete with bold creativity and craftsmanship that define his signature “kazuo-style.”
outside the kitchen, Chef Kazuo is passionate about music and fashion, often drawing creative inspiration from it. his style and energetic personality extend beyond sushi, shaping everything from the omakase experience to his approach to everyday life.
